An unusual cuvee defying the law of nature...
A rich harvest of Merlot grapes from south oriented slops. A short vatting period (only a few hours) before an ageing in vats for 30 months. The first part of alcoholic fermentation happens the year of the harvest (2010). After a first ending of the alcoholic fermentation, Malolactic fermentation starts on spring 2011. Finally wine needs to wait until winter 2012 for alcoholic fermentation to continue and finish its work at a constant temperature in cellar (10°c)
