Bellae Domini

Very persistant on the mouth, its tannin structure is soft and silky...

This cuvée benefit from a very long maturation of 18 to 24 months according to vintage. Burgundy casts of at least 3 wines, used only to provide soft oxidation to very ripen merlot harvest. Malolactic fermentation will also happen into oak. This wine can be drunk young, but will then melt its red fruits primary aromas into a more complex expression with toasted toffee or moka.

Very persistant on the mouth, its tannin structure is soft and silky. Decanted and slightly brought to room temperature, even after three days of opening, if you can resist to temptation, this wine will continue to surprise you.

It will perfectly pairs with game dishes. Light sediments at the bottom of the carafe or of the bottle are completely natural as it is a token that this wine was not filtered in order to keep its full richness.

"Bellae Domini" (latin version of the Belle du Seigneur) is an hymn to love, which can be spiritual and religious when its join a none to God, or passionate for Arian and Solal on the famous Albert Cohen's novel "Belle du Seigneur"

No racking nor filtration when bottled
Chemical analysis : alcohol content : 13.8 % vol, total acidity : 3.53 gr H2SO4 gr/L, volatile acidity : 0.46 gr H2SO4 gr/L, free sulfurous Anhydride : < 10 mg/L, Total sulfurous Anhydride : 93 mg/L, residual sugars :< 2 gr/L.
